Dinner Table
Phoenix Bio Science Core and Arizona Science Center
Description:
Chris Wharton, PhD, and artist Patricia Sannit were chosen to participate in ARx4, a project originating in the Phoenix Bioscience core designed to create collaborations between artists and scientist with the intent of sharing the important work of scientists to the general public. Dinner Table is their collaborative project. Patricia synthesized Chris’s data detailing collapsing food systems and solutions to improve the system–and focused on the practical solution of composting, while alluding to the waste and precarity of contemporary agriculture, fresh and processed food transportation and distribution. The result was a dinner table (Chris built), and an installation featuring a stenciled graph illustrating Chris’s research, vessels of reclaimed clay, sweet potato vines nurtured by composted food waste, and broken sculptural pieces representing the lives and biology of healthy soil.
Christopher Wharton is a professor of nutrition at ASU’s College of Health Solutions. He has studied dietary patterns and food decisions among individuals and households for nearly two decades, from the micro- to macro-levels. His current research interests include consumer and household food waste reduction, plant-forward diets, and food systems issues that affect health and sustainability simultaneously.
